Phytic acid is an important organic phosphorus series additive. Its aqueous solution is strongly acidic and possesses strong chelating ability. It can quantitatively precipitate Fe ions at low pH; at moderate or high pH, it can form soluble complexes with all other multivalent cations. It can significantly inhibit the oxidation of vitamin C, and when mixed with vitamin E, it exhibits synergistic antioxidant effects.
